The Chemex pour over is a fantastic way to brew a very clean and delicious cup of coffee for a larger group of people (or many cups for yourself).

Prepping the Filter

  • You will want to begin by heating your water to 200-202ºF. Then use your heated water to rinse the paper Chemex filter.
  • Rinsing the filter will ensure any paper taste is washed out of the brew, and will also serve to heat the Chemex prior to brewing.
  • Discard the water left in the Chemex.

The Beans

  • Weigh out 40g of freshly roasted coffee.
  • For our Chemex brew method we prefer to use a more coarse grind, similar to that of a french press.

The Bloom

  • Add approximately 80g of hot water to the coffee grounds in an even, rapid circular motion, spiraling from the center to the outer rim. The goal is to wet all of the grounds at the same time for even extraction. This will begin the bloom process.
  • Allow the coffee to bloom for 40 seconds.

Finishing The Brew

  • Continue slowly adding water to the center of the brew in a controlled circular motion (think silver dollar sized) to an end weight of 640 grams.
  • Allow the water to fully drain through the coffee bed. This should take approximately 4 - 4 1/2 minutes. Adjust the grind accordingly if your water is draining too quickly/slowly.

  • Once the water has fully drained through, discard your filter and grounds.
  • Serve your coffee and enjoy! You deserve it.
